ChefTom: Great Steak

Wow, Chef, that was a truly GREAT steak last night. The whole meal was a hit, but that steak was killer. Your combination of steak rub and balsamic reduction were spot on. Mel and I really appreciated the invitation.

FloridaNative: Cal's Caldillo

Hi Chef Cal Smile We really enjoyed this, and though I didn't have the 'right' ingredients, I really do mean it when I say it was one of the best recipes I've ever made from recipezaar, and I'm glad I got to adopt you during Pick-A-Chef and make this recipe. AKeezer: Something To think About

You should try making Indian Taco's. It's just fry bread topped with taco meat, cheese,lettuce and whatever else you would suggest. It's great and everyone will love it.

Donna Bach: YKHC Director of Public Relations

I too am very impressed with the food selection at YKDRH and am very pleased with the contributions Chef Callahan has provided not just to the dietary and food staff at the hospital but also his contributions with the Hooper Bay Subregional clinic Grand Opening and this year's 2009 Employee Appreciation Picnic/BBQ. I recently had the Thai Tuesday seafood meal with potstickers and fried rice and found the meal delicious, nutritious, great proportions, and filling to keep me charged throughout the day.  I honestly think that the YKHC dietary selection with price, variety, and immediate and awesome customer service by dietary staff outshines any other food service outfit in the delta.  Many thanks Chef Callahan for your enthusiasm, leading a team, and feeding folks in our region.  Keep up the great work!  I can't wait to see what else is featured on the menu. Keep up the great work!

Necie Cole: Cafe YK

My spirits continue to rise just by reading the menu each day! And when I partake I feel like I have died and gone to heaven. I love b***g able to taste something and to look forward to a good meal. After 5 years here I have basically given up cooking, gained 40 lbs. and exist on food that is tasteless, out of a big-box freezer bag and the same all over town. So your arrival has certainly given me an uplift and has rekindled an interest in cooking. Keep up the good work and again, welcome. Necie Cole

No Hiren, you cannot have him. We just adore what Chef Michael has been doing for us here at YK in Bethel, Alaska. The only down side is that the lines are much longer in Cafe YK now that Michael is here.

Hiren Basheer: Come back to CA soon...

I a word -- Wow!I've been to two events now catered by Chef Callahan. Each time both the food and service were exceptional.Chef Callahan is a culinary genius. Don't hire him if you are just looking for run-of-the-mill familiar selections. What you will find with this chef is ever-changing menus of freshly created selections that are not overly complicated yet tantalize the pallet. My current favorite from this event has to be the sea bass, which was served with a yellow corn sauce. The fish was cooked to perfection. The sauce was bright colored, but the flavor was subtle enough to compliment the entre.To a person, we each enjoyed our evening fare. All the deserts we shared were extraordinary. From the Chocolate cake to the house-made sorbets you won't be disappointed. What's this I hear Chef Callahan is moving to Alaska? Don't stay too long we'll miss you!

Saturday's party in North Beach was a great success!

My guests were very pleased and I got many compliments on the food and service, which I passed on to Scott, Jen and the team, who were all really terrific.

In fact, the Mayor told me he thought it was a great party.
